Oil, butter and other cooking aids decompose contaminate or start to lose their effect on the cooking surfaces. It is important that they are removed and the equipment refreshed for taste and hygiene reasons. Pyrolyzed (Burnt) fats require aggressive or time-consuming cleaning techniques. Common techniques to clean are dry ice blasting or water under very high pressure.
